EASY CORNBREAD RECIPE


2 CUPS FLOUR
2 CUPS CORNMEAL
2 EGGS
2 CUPS MILK
2 TEASPOONS SALT
2 TEASPOONS BAKING POWDER
2 TEASPOONS SUGAR
4 TABLESPOONS VEGETABLE OIL

Preheat oven to 350 degrees. Mix milk, eggs and vegetable oil and beat well. Add the rest of the ingredients and pour into 9 1/2" cast iron skillet that has been heavily coated with vegetable oil. Bake until done.


Southern Style Biscuits

Ingredients:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup butter
3/4 to 1 cup buttermilk

Directions:
Preheat oven to 500 degrees. Combine all ingredients. Stir dough until it is thick. Flour your hands. Pat out dough. Do not knead. Roll dough into 9 balls and put dough in round pan. Cook dough 8-10 minutes. Makes 9 Biscuits






ORANGE JUICE CAKE

1 BOX BUTTER YELLOW CAKE MIX
1 BOX INSTANT VANILLA PUDDING
4 EGGS
1/2 CUP OIL
1 CUP ORANGE JUICE
1 CUP CHOPPED PECANS

ICING

1 CUP SUGAR
1 STICK BUTTER
1/2 CUP ORANGE JUICE

Preheat oven to 350 degrees. Mix cake mix, pudding, eggs, oil and orange juice. Grease and flour bundt pan. Pour nuts in bottom. Add batter and bake about 45 minutes or until done.

ICING DIRECTIONS

Mix icing ingredients and bring to a boil. Boil for two minutes. When cake is done, pour over hot cake while still in pan. Let cool and then remove.




Southern Style Pimiento Cheese


8 oz. bag shredded cheddar cheese
4 oz. jar pimientos; drained
1/4 cup mayonnaise

1. Mix all ingredients.
2. Enjoy!




Melt In Your Mouth Chicken

3 chicken breasts
2 cups chicken broth
1 can cream of chicken soup
1/2 stick margarine
1/2 teaspoon black pepper
1 cup self-rising flour
3/4 cup buttermilk

Cook chicken and take off any bone or fat. Cut into bite-sized pieces. Place in casserole dish. Mix broth & soup. Bring to a boil, stirring to blend. Pour mixture over chicken. Sprinkle pepper over this. In a bowl, mix flour, margarine & milk. Spoon over chicken. Bake at 400 degrees for about thirty minutes.





Old Fashioned Macaroni & Cheese


2 cups cooked macaroni (elbow, shell, spirals, whatever, it all works)

1 cup cubed (not grated) cheddar cheese

1 beaten egg

salt and pepper to taste

2 cups scalded milk


Heat oven to 350 degrees.

Prepare a 2 quart casserole dish, round or square, by spraying with your favorite pan spray. I prefer glass dishes for this recipe but it can be any type.

Alternate layers of the cooked macaroni and cheese in the dish. Combine the egg, seasonings, and milk then pour over the macaroni and cheese layers almost to the top. Leave space so it won't cook over.

Bake for 20-25 minutes until most of the milk has been absorbed and the top is a nice brown.

For an extra touch, you can add buttered bread crumbs over the top or sprinkle with parmesan cheese as soon as it comes out of the oven.






Perfection Chocolate Pie

1 c. sugar
3 Tbsp. cocoa
dash of salt
5 Tbsp. cornstarch or 1/2 c. flour
3 eggs, separated
3 c. milk
1 Tbsp. margarine or butter
1 1/2 tsp vanilla extract
Meringue (recipe below)

Combine sugar, cocoa, salt and cornstarch ( or flour); add egg yolks and beat well, blending in milk. Cook on medium high heat, stirring constantly until it bubbles. Continue cooking for about 4 minutes, reducing heat if necessary, until mixture has thickened. Stir in margarine ( or butter) and vanilla.

Pour the hot filling into baked pie shell. Spread meringue over hot filling; seal to the edge. (Seal really good to the edge will prevent meringue from shrinking as you bake it)

Bake in a 350F oven until beautifully browned.

Cool on wire rack at room temp., then refrigerate.

Serve cold or at room temp.

Potato Refrigerator Rolls


1 1/2 cups warm water (not hot-110 to 115 degrees)
1 pkg. active dry yeast
2/3 cup sugar
1 !/2 tsp. salt
2/3 cup soft shortening
2 eggs
1 cup lukewarm mashed potatoes
7 to 7 1/2 cups GOLD MEDAL flour

In bowl, dissolve yeast in water. Stir in sugar, salt, shortening, eggs and potatoes. Measure flour by dip-level-pour method or by sifting. Mix in flour with hand until dough is easy to handle. Turn onto lightly floured board. Knead until smooth and elastic. Place greased-side-up in greased bowl. Cover with damp cloth; place in refrigerator. About 2 hr. before baking, shape dough into rolls, coffee cakes, etc. Cover and let rise until double, 1 1/2 to 2 hr. Heat oven to 400 degrees. Bake 12 to 15 min. Makes 4 doz. medium rolls.





AUNT BEE'S PUFFY PANCAKES

Ingredients

  • 2 eggs

  • 3/4 cup milk

  • 2 1/3 cups Bisquick baking mix

  • 2 tablespoons sugar

  • 1/4 cup salad oil or melted shortening

In a small mixer bowl, beat eggs on high speed 5 minutes or until thick and lemon colored. Stir in remaining ingredients. Pour batter from 1/4-cup measuring cup onto medium-hot ungreased griddle.

Bake until puffed and bubbles begin to break. Turn; bake other side until golden brown. Makes 12.


AUNT BEE'S FRIED CHICKEN

Ingredients

  • 1/3 cup flour

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 to 1/2 teaspoon poultry seasoning

  • 1 (2 1/2 to 3-lb.) frying chicken, cut up

  • 1 cup oil or shortening

In a plastic bag, combine flour, salt, pepper and poultry seasoning. Shake chicken, a few pieces at a time, in flour mixture to coat. Heat oil in large skillet over medium heat; brown chicken. *Reduce heat; cover and simmer 30 minutes or until chicken is fork tender and juices run clear, removing cover last 10 minutes to crisp chicken. 4 to 5 servings.


AUNT BEE'S PEACH PIE

Ingredients

  • 2 sticks or 1 packet of pie crust mix

  • 5 cups sliced fresh peaches (about 9 medium)

  • 1 teaspoon lemon juice

  • 1 cup sugar

  • 1/4 cup All Purpose Flour

  • 1/4 teaspoon cinnamon

  • 2 tablespoons butter or margarine

Heat oven to 425 degrees. Prepare pastry for a 9 inch Two-crust Pie as directed on package. Mix peaches and lemon juice. Stir together sugar, flour and cinnamon; mix with peaches. Turn into pastry-lined pie pan; dot with butter. Cover with top crust which has slits cut in it; seal and flute. Cover edge with 2 to 3-inch strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking.

Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through slits of crust.
